Need a healthy side dish? I am always on the lookout for new ways to cook vegetables and this corn dish is easy to throw together and tastes unbelievable!
Confetti Corn (recipe from Ina Garten)
- 2 tbsp olive oil
- 1/2 cup copped red onion
- 1 small orange or yellow bell pepper, diced
- 2 tbsp unsalted butter
- 4 cups corn kernels ( I use frozen yellow corn)
- 1 1/2 tsp salt
- 1 tsp ground black pepper
- 2 tbsp chopped fresh basil, minced fresh chives, or minced parsley (I enjoy basil very much)
Heat oil over medium heat. Add onions and sauté until soft. Stir in chopped bell pepper and sauté another 2 minutes. Add butter and allow to melt. Stir in corn, salt, and pepper and cook approximately 10 minutes until corn is tender. Stir in basil at the end and serve!
