Breakfast muffin

Within an hour of eating a meal I am always grabbing for a snack…and hopefully find a healthy one. Unfortunately, I have a weakness for breads and muffins. This muffin recipe is delicious and healthy. Eat one (or two or three) for breakfast or anytime during the day! I always make a double batch and freeze them so that I can grab one anytime!

  • 1 cup whole wheat flour
  • 1 1/4 cups oatmeal
  • 1/4 cup brown sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp ginger
  • 4 ripe bananas, mashed
  • 2/3 cup applesauce
  • 1/3 cup carrot, shredded
  • 1 large egg
  • 2 tbsp butter, melted

Preheat oven to 375 degrees. Spray muffin pan with non-stick cooking spray. Combine first 8 ingredients in mixing bowl (flour-ginger). In a separate bowl, combine next 5 ingredients (bananas- butter). Stir until well blended. Add banana mixture to the flour mixture. Stir just until moistened. Do not over stir. Fill muffin cups 2/3 of the way full. Bake for 20 minutes.

* You can choose to add a streusel topping, but they are healthier without it and still yummy!
