A breakfast must

I found this recipe for healthy pancakes that your kids are sure to love (and you too!). Other than being nutritious, the texture of the pancake is perfect for little ones! Its a great finger food and so moist that I don’t have to worry about Lola choking on them. The recipe made about 25 small pancakes so I froze them on parchment paper then transferred them to a freezer bag. They are so great to have on hand and taste just as good after popping them in the toaster or microwave. Any food ideas that you love for your little ones? Do share!

Whole Wheat Apple Pancakes (recipe courtesy of squashblossombabies.com)

  • 1 1/2 cups whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp cinnamon
  • 3/4 cup applesauce
  • 1 cup of milk
  • 2 egg whites
  • 1 tsp vanilla extract

Stir together dry ingredients. In a separate bowl combine wet ingredients. Pour dry ingredients into the wet and stir just until combined. Spray your pan with non-stick spray and pour about a 1/4 a cup of batter into your hot pan. I made mine small so they cooked up pretty quickly. Eat all at once! Or freeze for later 🙂
